A hologram recording and reproducing apparatus and method are provided to reduce the interference by the adjacent magnetic track or adjacent recording position by changing the incidence angle of reference beam according to the track position or recording position on an optical information recording medium. A hologram recording and reproducing apparatus comprises a laser source, an optical device which forms signal beam and reference beam from the light emitted from the laser source, a spatial light modulation which modulates the signal beam, an optical system which causes interference between the modulated signal beam and the reference beam, a reference beam angle control unit for controlling the incidence angle of the reference beam on a hologram optical information recording medium, and an optical detector which detects the light reproduced from the optical information recording medium.
