<P>PROBLEM TO BE SOLVED: To provide a method for preparing bubble-containing chocolate capable of preparing bubble-containing chocolate of a lower fat concentration and a lower specific gravity relative to a prior art bubble-containing chocolate using a simple machine such as a vertical mixer, and to provide bubble-containing chocolate prepared by this method. <P>SOLUTION: Bubble-containing chocolate of a low fat concentration and a low specific gravity can be prepared by a simple process by using edible oil and fat, a specific emulsifier, and a saturated fatty acid triglyceride comprising behenic acid. <P>COPYRIGHT: (C)2009,JPO&INPIT |
