摘要 A method for preparing a milk coagulated food product is provided to improve a taste and flavor for a sausage and ham. A method for preparing a milk coagulated food product comprises the following steps of: adding water to barleys or germinated barleys, and pulverizing, filtering the barleys or germinated barleys to obtain a barley solution(i); mixing the barley solution and milk in a ratio of 1 to 1 and leaving the milk with the barley solution as they are for 30 minutes to obtain milk coagulated materials(ii); and adding 10-20wt% of the milk coagulated materials to raw meat for a sausage or ham to preparing the milk coagulated food product(iii).
