ANHYDROUS CRYSTALLINE beta-MALTOSE, METHOD OF PRODUCING THE SAME AND USE THEREOF

It is intended to provide a novel anhydrous crystalline maltose, a method of producing the same and a use thereof. This object can be achieved by providing anhydrous crystalline beta-maltose having a melting point of from 154 to 159oC, a method of producing the anhydrous crystalline beta-maltose as described above which involves the step of maintaining aqueous crystalline beta-maltose in an organic solvent at room temperature or higher to thereby dehydrate the same, and a use thereof.
