<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition for deep-fried food, suppressing for a long period, coloring and cooked odor which occur in heating, and excellent in flavor. <P>SOLUTION: This oil and fat composition contains edible oil and fat, and 0.1-10.0 ppm of phosphorus. The prescribed phosphorus content is obtained by addition of a component derived from phosphorus, such as pressed oil and/or extracted oil, degummed oil, lecithin, and phosphoric acid and/or phosphate.
