PROBLEM TO BE SOLVED: To quickly control remaining rice treatment at the finishing of work in a rocking sorting plate type rice hulling and sorting machine. SOLUTION: An operation device 42 of the rice hulling and sorting machine comprises an in-machine circulation means setting a circulation/discharge selector valve 31 in an in-machine circulating state with a main motor M1 and a rocking motor M3 driven; a machine outside discharging means setting the circulation/discharge selector valve 31 in a machine outside discharging state with the main motor M1 and rocking motor M3 driven; and a remaining rice treating means driving the rocking motor M3 in a state where an unhulled rice-shortage sensor SE3 detects the unhulled rice shortage state, after stopping the rocking motor M3 by an unhulled rice shortage stopping means.
