<P>PROBLEM TO BE SOLVED: To provide a food material utilizing functionality which cereal β-glucan has, and produceable at a low cost. <P>SOLUTION: A saccharified cereal product contains 1-10 mass% of β-glucan which is obtained by using β-glucan-containing cereal, as the raw material, performing protein decomposing reaction before liquefying-saccharifying reaction, using protein splitting enzyme which has a β-glucanase activity of 0-10%, performing starch decomposing reaction by liquefying enzyme with a β-glucanase activity of 0-10% and saccharifying enzyme with a β-glucanase activity of 0-10%, and performing solid separation, spray-dry, or freeze-dry.
