摘要 In the present invention, there is disclosed a process for preparing a food material consisting of animal proteins containing pure egg white, said preparation process comprising doping egg whites with a suitable food acid, adjustment of acidity to a pH value ranging from about 4,8 to about 5,6, filling thereof with air and creating a mechanically solid mixture and conveying said mixture through a slotted nozzle to a hot water level.
