A method for preparing a coagulating agent for a tofu made from deep ocean water is provided to mask-process bittern to remove a bitter taste, thereby improving a taste of the tofu. A method for preparing a coagulating agent for a tofu made from deep ocean water comprises the following steps of: gathering water from a place deeper than depth of water of 200m and mixing a produced bittern in a salt producing process(i); removing sodium chloride, calcium chloride, and a sulfate ion from a mixture which includes the water and the bittern(ii); and supplying the deep ocean water with non-reducing saccharide, an alkaline agent, and an emulsifier to prepare the coagulating agent for a tofu. |
