PREPARATION OF FUNCTIONAL HYDROLYSATES FROM OYSTER USING TRANSGLUTAMINASE

A method for manufacturing a functional oyster enzyme hydrolysate and the functional oyster enzyme hydrolysate using transglutaminase are provided to use for inhibition of neutral lipid/total cholesterol, recovery of a liver function etc and to use the hydrolysate as a raw material or a material of toiletries and medical supplies. A method for manufacturing a functional oyster enzyme hydrolysate using transglutaminase comprises the following steps of: preparing a raw material of meat of fish and shellfish(1); adding the tap water into one material selected from the prepared material and crushing the material with 3000 rpm in pH 6.7 for 2 minutes; adding ransglutaminase of 1% and reacting the material in 30°C for 1 hours; performing a first hydrolysis in 100°C(4); reacting the hydrolyzed material with neutrase and performing the second hydrolysis; performing the hydrolyzed material secondly with a centrifugal separation method for 25 minutes and precipitating protein and performing the hydrolysis(5); filtering the hydrolyzed material through filter paper(7); evaporating ethanol from filter liquor; performing an Ultra filtration after filtering the evaporated material(8); and lyophilizing the filter liquor.
