Disclosed is a process to produce IPP from a protein source whereby the ratio of IPP and VPP produced from the protein is at least 5:1, preferably at least 10:1 and more preferably at least 20:1, which comprises the use of a proline specific endoprotease and an enzyme that is capable of hydrolysing the bond at the amino terminal side of a -IPP- sequence.
