<P>PROBLEM TO BE SOLVED: To obtain a sterile liquid potage soup in a packaging pack, which has excellent taste of body and flavor and maintains a taste during preservation and distribution. <P>SOLUTION: The sterile liquid potage soup in a packaging pack is obtained by using lard as an oil and fat raw material which has a peroxide value of 0-0.3 and a CDM (conductometric determination method) value adjusted to a range of 13-25 hours by addition of an antioxidant, heat-treating the lard and packing the lard after super-high temperature sterilization treatment. The sterile liquid potage soup in a packaging pack comprises 0.5-5 mass% of lard and has the peroxide value of soup of 0.3-1.0. <P>COPYRIGHT: (C)2009,JPO&INPIT |
