<P>PROBLEM TO BE SOLVED: To provide a method for industrially producing boiled eggs excellent in eggshell peeling, and easy to peel eggshell owing to the yolk free from decentering. <P>SOLUTION: This method for producing the boiled eggs comprises preserving eggs with eggshell while removing carbon dioxide in an atmosphere with a carbon dioxide removing means, and subjecting the eggs with eggshell to heat coagulation treatment.
