PROBLEM TO BE SOLVED: To provide a method for producing 3-deoxyanthocyanidin from a composition containing a gallate-type catechin, an addition composition for an acidic fermented tea containing 3-deoxyanthocyanidin, and a fermented tea drink incorporated with 3-deoxyanthocyanidin. SOLUTION: 3-Deoxyanthocyanidin is produced by heating a composition containing a gallate-type catechin in powdery form. The production efficiency of 3-deoxyanthocyanidin can be improved by amorphosizing a solution containing a bivalent or trivalent metal ion and a gallate-type catechin and heat-treating the amorphous product. A composition containing 3-deoxyanthocyanidin and usable as an additive for an acidic fermented tea can be prepared by adjusting the composition ratio of tricetinidin to luteolinidin, and a fermented tea drink having improved color can be produced by adding 3-deoxyanthocyanidin to a fermented tea drink.
