The method for fermentation by yeast reduction for the production of ethanol, comprises vaporizing the total fermented mash without prior separation in a centrifuge in vacuum vaporization. A first partial flow is led back after the vaporization in the fermentation while a second partial flow is further concentrated and separated as byproduct. The vacuum vaporization is carried out at 38-45[deg] C as multi-stage process. Low boiling components are separated from ethanol containing exhaust vapor in the last step of the vacuum vaporization. Insoluble components are separated from the mash before the fermentation. The ratio between the first and the second partial flow is freely selectable and the requirement of the total process is adjusted. The quantity of water separated from the fermented mash corresponds in the vacuum vaporization and is subjected to the fermentation process. The alcohol content of the exhaust vapor is 12-45 wt.%.
