<P>PROBLEM TO BE SOLVED: To provide a method for producing new pickled Japanese plums using turmeric. <P>SOLUTION: The method for producing pickled Japanese plums includes: a salting process S3 of putting Japanese plums in a container to pickle them with table salt; a salting liquid-removing process S4 of removing the salting liquid charged in the container after the salting process S3; a turmeric-pickle process S5 of putting turmeric liquid in the container to pickle the salted Japanese plums with turmeric after the salting liquid-removing process S4; and a turmeric-pickled Japanese plum drying process S12 of taking out the Japanese plums pickled with turmeric and drying them after the turmeric-pickle process S5. The method preferably includes: a turmeric-pickle liquid-adhering process (a process of applying the turmeric pickling liquid) S13 of making the turmeric pickling liquid adhere to the surfaces of the turmeric-pickled Japanese plums after the turmeric-pickled Japanese plum drying process 12; and a turmeric-adhering Japanese plum drying process S14 of drying the turmeric-pickle liquid-adhering Japanese plums after the turmeric-pickle liquid-adhering process. <P>COPYRIGHT: (C)2009,JPO&INPIT |
