<P>PROBLEM TO BE SOLVED: To provide a technology that enriches GABA (γ-aminobutyric acid) in a high concentration safely, inexpensively and simply, is widely usable in various foods and has excellent practicality. <P>SOLUTION: In producing a plant sprout enriched with GABA, the growth period and the growth temperature of a plant in which GABA in the plant is accumulated in the largest amount are examined. As a result, when plant seeds are cultivated under specific conditions, a plant sprout enriched in GABA is manufactured.
