<P>PROBLEM TO BE SOLVED: To provide a bean curd refuse slightly causing reduction in its palate feeling even after thawed, and to provide a method for producing the same. <P>SOLUTION: The bean curd refuse contains 300-750 pts.mass of raw bean curd refuse, 50-150 pts.mass of etherified tapioca starch, 50-150 pts.mass of pulverized wheat bran and 50-150 pts.mass of vital gluten based on 100 pts.mass of refined konjak powder. The method for producing the bean curd refuse includes mixing 50-150 pts.mass of the etherified tapioca starch, 50-150 pts.mass of the pulverized wheat bran and 50-150 pts.mass of the vital gluten to 100 pts.mass of the refined konjak powder in powdery state, adding water to the mixture to be mixed, and adding 300-750 pts.mass of the raw bean curd to the mixture to be mixed followed by adding a calcium hydroxide water solution to the mixture to be molded. <P>COPYRIGHT: (C)2009,JPO&INPIT |
