FIELD: food production process. ^ SUBSTANCE: apples and potatoes are sliced and fried in tallow, peanuts are roasted, runner beans are cut and frozen; part of the apples, the potatoes, peanuts, runner beans and culinary salt are mixed under oxygen-free conditions to produce the garnish. Pork is cut and beaten. The meat chops (with the remaining apples folded in) are steeped into liaison, breaded in wheat crumbs and fried in tallow to produce schnitzels. The schnitzels, garnish and tallow are packaged, vacuum-sealed and sterilised. ^ EFFECT: diversification of available food products; improved digestibility of preserve foods as compared to standard analogues (digestibility value increased from 1.105 to 1,3.105). |
