A method for preparing the cookie or snack by using barley, and the cookie or snack prepared by the method are provided to remove the tough taste of barley and to simplify the process by performing no complex pretreatment.. A method for preparing the cookie or snack by using barley comprises the step of making cookie or snack by using the barley powder containing glutaminase. Preferably the glutaminase is transglutaminase, and the amount of transglutaminase is 0.001-1.0 parts by weight based on 100 parts by weight of a barley powder. Preferably the barley powder has a particle size of 160-240 mesh. |
