NEW GLYCOSYLTRANSFERASE AND METHOD FOR PRODUCING GLYCOSIDE BY UTILIZING THE SAME

PROBLEM TO BE SOLVED: To provide a new glycosyltransferase having 1,6-glucosyltransferase activities and activities for extending the sugar chain by conjugating glucose one by one, to provide a method for producing the glycosyltransferase, a gene of the glycosyltransferase utilizable in the production method, a vector having the gene and a transformant, and to provide a method for producing a glycoside by using the recombinant glycosyltransferase produced from the transformant, and a method for improving the water solubility of a glucoside using the enzyme.

SOLUTION: The protein derived from Catharanthus roseus and having the 1,6-glucosyltransferase activities for binding a glucosyl group to a glucose residue of a glucoside by β-1,6 bond is used as the glycosyltransferase.
