摘要 A bean fermentation food is provided to reduce the maturation time by increasing the fermentation time and to lower the content of salt. A bean fermentation food is prepared by the Galactomyces geotrichum WDS-1 isolated from cheese. Preferably the bean fermentation food is prepared by not adding a salty solution or salt so as to obtain a low content of salt. Preferably the maturation time of the bean fermentation food is 15-20 days.
