<P>PROBLEM TO BE SOLVED: To provide carob bean gum having similar properties (for example, regarding texture nature, compatibility with other compounds) and having good solubility at a temperature much lower than a normal temperature for dissolving natural carob bean gum. <P>SOLUTION: This method for manufacturing carob bean gum with the average molecular weight (M<SB>w</SB>) ranging within 2.5×10<SP>5</SP>-1.5×10<SP>6</SP>g/mol includes (i) a step to hydrate of endosperm of carob bean, (ii) a step to simultaneously perform drying and pulverization for the hydrated endosperm, and (iii) a step to reduce the average molecular weight of carob bean gum by depolymerizing the carob bean gum obtained after the step (ii). <P>COPYRIGHT: (C)2009,JPO&INPIT |
