A manufacturing method of peach-fermented alcoholic drink is provided to improve the taste, after taste, flavor, price competitive powder and marketability of the alcoholic drink by using unsteamed rice and peach. The manufacturing method of peach-fermented alcoholic drink comprises the steps of: treating the raw materials including rice and peach(10); washing the rice with water, dipping the washed rice in water for a certain time, dehydrating the rice, and pulverizing the rice to the predetermined size(mesh)(11); washing the peach with water, and pressurizing and crushing the washed peach(15); mixing the rice flour, processed peach, water, saccharification enzyme and yeast, and mashing the mixture(20); fermenting the mixture at 20-30 deg. C for 5-10 days(30); and filtering the fermented mash obtained from the fermentation(40). |
