A process for preparation of sparkling wine provides for preparation of blend of dry (champagne) wine materials, its deoxygenation by means of heating and thermal exposure, addition of sugar-containing component and vat bottoms, supply of the obtained mixture to the fermentation tank and its fermentation, filtering of the fermented wine and filling of market containers with addition, as required, the special doze of sweetener. The fermentation is performed in the tank. The transportation of product at filling of fermentation tank and market containers is performed due to pressure differential in outlet and receiving containers. Air from the whole system, which comprises the fermentation tank, market containers and supply communications, is pressed off before filling with carbon dioxide. |
