A process for the production of a colloidal solution of insoluble collagen fibres such that the collagen is in a fibre reproducible state, the collagen being insoluble in dilute acid, alkali or neutral salt solution, comprises either heating the collagen to at least the shrinkage temperature thereof or treating the collagen with a protein denaturing agent in at least a sufficient amount to denature the collagen, treating the collagen with a proteolytic enzyme other than collagenase which has activity at a pH from 5 to 9 and extracting the collagen with acid at a pH from 1.5 to 4.5. The proteolytic enzyme may be trypsin, pancreatin or chymotrypsin and the colloidal solution may be further treated with a proteolytic enzyme having activity at pH 1.0 to 4.5 such as pepsin. The protein denaturing agent may be potassium thiocyanate, calcium, magnesium or barium chloride, urea, sodium salicylate or guanidine hydrochloride, and the acid may be hydrochloric, acetic, sulphuric, citric, malonic or lactic acid. The colloidal solution may be treated with an alkali such as sodium or ammonium hydroxide to a pH of from 7 to 8 to reproduce the collagen fibres. Gelatin may be produced by dissolving in hot water reproduced collagen fibres which have been prepared by a process incorporating the step of treatment with a proteolytic enzyme having activty at pH 1.0 to 4.5.
