摘要 PROBLEM TO BE SOLVED: To provide a rice flour composition that is obtained through a conventional flouring process in no need of special equipment or treatment, and can give bread and cake having excellent appearance, inner phase, taste and good keeping through the same processes as that of conventional ones, and the dough and the foods produced by using the composition and to provide methods for producing the same. SOLUTION: The rice flour composition for breads and cakes comprises 100 wt.% of grain powder consisting of 80 to 85 wt.% of rice flour and 20 to 15 wt.% of gluten, and 1 to 30 wt.% of maltose, the rice flour is obtained through roll milling, stone milling, air flow crush milling or high-speed rotation milling, the composition is used to produce the dough and foods, and the methods for producing the same are provided.
