PROBLEM TO BE SOLVED: To continuously perform so-called high-speed drying while preventing cracking of grain. SOLUTION: This dryer comprises a drying portion for drying a dried object by action of hot air for drying, a moisture detecting means for periodically detecting the moisture of the dried object during drying, a returning means for allowing the exhaust air after passing through the dried object to join the hot air for drying, an adjusting means for adjusting an exhaust air returning amount, a means for determining the exhaust air returning amount or a returning ratio to the total exhaust air according to a moisture value of the drying object, and a control means for operating the adjusting means on the basis of the exhaust air returning amount or the returning ratio according to the moisture value detected by the moisture detecting means.
