A method for processing the cereal is provided to increase the content of gamma-aminobutyric acid by treating it with protease. A method for processing the cereal comprises the step of treating the cereal with a hydrolase for 3-6 hours. Preferably the cereal is unpolished rice, barley or wheat. Preferably the hydrolase is at least one selected from the group consisting of protease, glycosidase and pectinase.
