摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing gelatinized noodles having an excellent feeling of elasticity and an exceedingly improved balance of viscoelasticity even in a long-term preservation at a low cost in order to prevent aging or reduction in texture with time of gelatinized noodles such as boiled noodles etc. <P>SOLUTION: The grain flour raw material is mixed with 0.1-100 IMCU of rennet based on 100 g of grain flour raw material and kneaded to make noodles.
