The food supporting carriage 22 of a motor driven rotary knife machine can be reciprocated by hand or connected at will to a power driven oscillating arm 135, Fig. 7, through a detachable coupling which causes the carriage to move in a linear path on guide rods 160, 162 and to decelerate and accelerate at the end of its stroke. As shown, the carriage 22 carries a channelled track member 175 which may be lowered for engagement with a roller on the end of arm 135, which is oscillated on a pivot 137 by a connecting rod or arm 132 and a motor driven crank 92. The track member 175 is mounted on a pin 172, Figs. 2 and 3, urged to raised inoperative position by a spring 178 and forced downwards, for power driving, by anticlockwise movement of a lever 180 effected by a manual upward pull on a handle end 185. When the handle is raised, Fig. 3, a bell crank lever 190 turns clockwise by gravity and a hook 195 thereon engages beneath a lug 187 on the handle to hold the parts in operative position. The carriage is then positioned by hand to allow the roller 145 to cam into the track 176 and a switch 198 is depressed to start the motor. When the carriage is to be reciprocated by hand the hook 195 is withdrawn from the lug 187, by tapping latch handle 193, to permit retraction of the track member by spring 178. The knife 20, Fig. 2, is driven through gear 64 from a motor driven shaft 66 which also drives the crank 92 through a shaft 72 and fast and slow gears 100, 97 one or other of which can be engaged by a slidable driving pin controlled by a manually operable slip rod 122. The food supporting wall 40 has a depending neck mounted on and secured to V-shaped ways on the carriage pedestal and has additional fences 45 for supporting more than one piece of material for slicing (Fig. 4, not shown).
