摘要 The bread where the pear juice is added, and a method for preparing the bread are provided to make bread without using sugar and to improve storage stability and antioxidizing effect. The bread where the pear juice is added is prepared by mixing 0.05-0.2 parts by weight of ascorbic acid or citric acid and 100 parts by weight of the pear flesh; pulverizing the mixture finely and heating it at 60-90 deg.C; juicing the mixture to prepare a pear juice; and preparing bread by using the obtained pear juice in the bread paste.
