摘要 The vinegar by using garlic in which the smell is removed and pine needle is provided to take the nutrients from garlic as the main raw material and pine needle, and improve the functionality and taste by removing smell from garlic and adding pine needle. The manufacturing method of the vinegar by using garlic in which the smell is removed and pine needle comprises the steps of: placing the seaming pot on the fire, pouring 1/4 to 1/6 volume based on the oven volume of the water into the pot, and placing the steaming plate on the pot, and placing the pine needle on the steaming plate; placing the 60-300 mesh of pulverized garlic on the pine needle, steaming it at 50-70 deg. C for 20-30 minutes, and cooling it to remove smell from garlic; adding 2-4 times higher volume of water than rice into the rice and steaming and cooling it to prepare the rice water; mixing 4-6 parts by weight of garlic in which smell is removed, 0.5-1.5 parts by weight of pulverized pine needle of 100-300 mesh, 10-20 parts by weight of the rice water and 2-4 parts by weight of sugar to prepare the sugar solution; inoculating the yeast into the sugar solution and alcohol-fermenting the solution at 7-25 deg. C for 20-30 days to obtain the alcohol-fermented solution; and inoculating the Acetobacter into the alcohol-fermented solution and acetic acid-fermenting the solution at 12-32 deg. C for 8-17 days.
