<P>PROBLEM TO BE SOLVED: To provide a preparation method of a sterilized packed boiled rice and barley that has a soft and resilient texture, is excellent in taste and flavor and besides can be stored for a long period of time at ordinary temperature. <P>SOLUTION: The preparation method of the sterilized packed boiled rice and barley comprises: the pretreatment step of barley wherein the barley hulled to a predetermined refinement is dipped in a 10-30°C purified water for 1-3 hours and passed through a dehydration process, and then a given amount is put into a packing material to pack portionwise, subjected to sterilization at 110-130°C for 20-40 minutes and then dried; the step of immersing the pretreated barley in a purified water; the step of washing a nonglutinous rice and then immersing in a purified water; the step wherein each immersed barley and nonglutinous rice is dehydrated and then they are mixed in a predetermined ratio and filled in a heat-resistant plastic container; the step of sterilizing the filled content at a high temperature-high pressure; the rice boiling step of doing so with steam using a UV-sterilized water as the rice boiling water; and the step of, after the completion of cooking the rice, sealing with a lead film in a clean room, allowing the cooked rice to stand, cooling and drying it and thereafter conducting the packing. <P>COPYRIGHT: (C)2009,JPO&INPIT |
