<P>PROBLEM TO BE SOLVED: To provide additive-free sponge cake enabling industrial volume production without using an all-in-mix method which uses additives, such as an emulsifier and a foaming agent. <P>SOLUTION: A method for producing sponge dough by a jointing method or a separation method includes steps of mixing 27-95 wt.% of liquid oil and fat at 20°C with oil phase, and using a water-in-oil emulsified product which is for addition to sponge dough, has an SFC of 5-18 of oil and fat constituting an oil phase at 20°C, and contains no emulsifier. <P>COPYRIGHT: (C)2009,JPO&INPIT |
