A method of manufacture of shaped seafood portions comprises placing a laminar template 1 having an aperture 2 corresponding to the plan view of a seafood portion onto a work surface to define a receptacle, placing pieces of seafood into the receptacle and building up the pieces to form a portion. The portion is then covered with a film and the exterior of the film is manipulated to form the pieces into a shaped portion, the film and template are then removed and the shaped portion is then frozen. The portion may be configured as fish fillet and covered with breadcrumbs or batter after freezing. The laminar sheet may have a plurality of apertures wherein the edge 4 of each aperture may be chamfered. A later embodiment relates to apparatus for carrying said method of manufacture. |
