摘要 A method for assessing the degree of negative effect of nitrates and nitrites on the activity of the system of antioxidant protection of the organism of young animals of cattle is based on analysis of the state of glutathione system of antioxidant protection according to the activity of blood enzymes. In the blood of the animal being assessed the level of glutathione is additionally determined and according to a complex picture, judgements on the degree of the negative effect of nitrate loading are made. The animals, in which the level of glutathione is within the range of 27.60-36.90 mg %, the activity of glutathione peroxidase is within the range of 34.6-38.4 nmol of NADPH/min per 1 mg of protein, the activity of glutathione reductase is within the range of 1.49-1.64 nmol NADPH/min per 1 mg of protein, the activity of glucose 6-phosphate dehydrogenase is within the range of 0.705-0.775 nmol NADPH/min per 1 mg of protein are considered as clinically health. The animals in which the level of glutathione is within the range of 20.95-22.15 mg %, glutathione peroxidase is within the range of 20.5-33.0 nmol NADPH/min per 1 mg of protein, the activity of glutathione reductase is within the range of 0.65-1.46 nmol NADPH/min per 1 mg of protein, the activity of glucose 6-phosphate dehydrogenase is within the range of 0.52-0.699 nmol NADPH/min per 1 mg of protein, are considered as partially damaged by the effect of nitrates and nitrites and require correcting the system of antioxidant protection of the organism using natural or synthetic antioxidants and vitamins. The animals in which the level of glutathione is lesser than 17.30 mg %, the activity of glutathione peroxidase is lesser than 20.0 nmol of NADPH/min per 1 mg of protein, the activity of glutathione reductase is lesser than 0.60 nmol of NADPH/min per 1 mg of protein, the activity of glucose 6-phosphate dehydrogenase is lesser than 0.50 nmol NADPH/min per 1 mg of protein, are considered as damaged by the effect of high level of nitrates and nitrites in feeds, with manifestation of irreversible metabolic disturbances.
