[Also in Division B1] In making jellied sweets and confectionery, e.g. containing liquorice &c. extracts, ingredients comprising starch, are mixed with water in a steam-jacketed vessel 10, Fig. 1, and heated to a temperature below the gelatinization point of starch, e.g. between 60‹ and 70‹C. The heated flowable mixture is then passed through a pipe 13 and a valve 14 to a pump 15, which delivers the mixture, through a pipe 16, into the chamber 18 of a steam injector 17. A steam jet 19 is located in the chamber 18, which has a venturi outlet 20, 21. Steam is supplied to the jet through a valve 23 and a pipe 22. Steam issuing from the jet creates suction in the chamber 18 and thus causes expansion of starch grains and atomization of the mixture. The mixture incorporating steam, e.g. at a temperature of 135‹C., is accelerated as it passes from the chamber 18 through the outlet 20, 21. The mixture then flows through a chamber 25, in which the starch is gelatinized, e.g. at a temperature between 125 and 145‹C and a pressure between 2.5 and 3.0 kg/cm<SP>2</SP> as indicated on a gauge 26. The mixture leaves the chamber 25 through a valve 28, emerges into a normal atmosphere through a flared discharge duct 29 and, after being mixed, if desired, with colouring, flavouring and/or medicinal substances, is collected in a mould or bin 32, wherein it may solidify into slabs, which may be formed into pastilles or rolled or extruded into rods, ribbons, tubes or sheets. A hood 30, having a fan 31, is provided around the duct 29 to remove vapours. According to example 1, the ingredients are:- wheat flour, sucrose, molasses or syrup, and licquorice extract. According to example 2, the ingredients are:-sucrose, glucose and maize starch. in extracting liquorice from washed, unpeeled liquorice root, it is crushed into chips and mixed with water in a closed vessel 10a, Fig. 2. The mixture is pumped, by the pump 15, into the steam injector 17, from which the mixture incorporating steam is discharged, through the chamber 25, the valve 28 and an open-ended, vertical tube 34, into a vessel 33. The aqueous liquorice extract is separated from the exhausted chips and evaporated and dried to form a powder or blocks. Gelatine, agar-agar, pectins and other carbohydrate gums may be extracted, similarly, from suitable comminuted raw materials and used, instead of starch, as ingredients of the sweets and sweatmeats. The mixture from the chamber 25 may be returned to the vessel 10 or 10a, through a valve 36 and a pipe 35. Specification 883,440 and U.S.A. Specification 2,805,966 are referred to.
