摘要 A functional soy sausage and a manufacturing method thereof are provided, which uses the soy protein and the anthocyanin extract separated from the black soybean. A functional soy sausage manufacturing method comprises: removing fat from the black soybean which is crushed and hulled; extracting and precipitating protein by controlling PH; obtaining anthocyanin and black soybean isolation soy protein powder; dehydrating and pulverizing black soybean isolation soy protein powder and putting it into emulsion; kneading the second supplementary material, putting it into a filling device, and heat-treating after mixing the first supplementary material; and manufacturing the bean sausage by cooling and storing.
