SOYBEAN JELLY COMPRISING SOYBEAN MILK AND PREPARATION THEREOF

Soybean jelly comprising soybean milk and a preparation method thereof are provided to ensure appropriate properties and to perform cold preservation by not occurring the water separation. A preparation method of soybean jelly comprising soybean milk comprises (1) a step for dissolving a gelling agent consisting of carrageenan, locust bean gum and gellan gum in water; (2) a step for adding the heated soy oil in the melt of the step(1), mixing and heating the mixture; and (3) a step for cooling the obtained one of the step(2).
