FIELD: food industry. ^ SUBSTANCE: dough mixer of continuous operation for production of cookies consists of rotor feeder and stabiliser of free-flowing components outgo, upper and lower rotating towards each other drum dosing unit-blender for liquid and free-flowing components, vibrating chute for moving of free-flowing components to the upper rotating drum dosing unit-blender, upper and lower bowls with nozzles for continuous supply of liquid components made so that 1/3 of the rotating drum dosing unit-blenders are freely located in them. The device also contains the upper and the lower rotating towards each other clamping adjustable drums, providing the specified thickness of the dough sheet. The drum dosing unit-blenders and clamping drums are equipped with scrapers for removing of stuck dough from their surfaces. Between the upper and the lower dosing unit-blenders there is a guide way for delivery of a dough sheet to the lower rotating drum dosing unit-blender made so that the dough sheet at falling down onto the lower drum dosing-unit-blender turns to the other side and contacts the liquid components of the other surface. The device also contains a conveyor for moving of the lower rotating drum dosing unit-blender to the moulding machine. The rotating drum dosing unit-blenders for liquid components are made with the possibility of regulation of liquid component supply by changing their peripheral speed, and at the transition from the upper rotating drum dosing unit-blender to the lower one there is a change of the contact surface of the dough sheet with liquid components. ^ EFFECT: intensification of dough mixing process, final product quality increase, provision of mixing uniformity and production of homogeneous dough in form of sheet that saves additional operation and equipment for its formation. ^ 1 dwg |
