摘要 FIELD: food industry. ^ SUBSTANCE: method includes filling of jars with juice, processing of the filled jars with UHF field at the frequency of 240050 MHz within 55 - 60 sec up to 90 - 92C. Then filled jars are hermetised and pasteurised in the autoclave. ^ EFFECT: allows to reduce the duration of thermal pasteurisation of preserves.
