A manufacturing method of Whisky or Brandy is provided to reduce the manufacturing period by adding the fragments or particles of the oriental oak to the original liquor of Whisky or Brandy, heating and stirring the mixture, and maturing the mixture. The rapid manufacturing method of Whisky or Brandy comprises the steps of: inoculating the yeast into the juice of the cereals, which is prepared by mixing the steamed cereals and malt, saccharifying the mixture at 55-60 deg. C for 3-7 hours, and compressing the saccharified product, or the fruit juice, and fermenting the juice; distilling the fermented liquid to obtain the distillate in which the content of alcohol is 50-60 %(v/v); adding 10-15%(w/w) of the fragments or particles of the Fagaceae plant into the distilled liquor and maturing the liquor at 40-60 deg. C for 1-3 months with agitation; and filtering the matured distillate to remove the solids, diluting the filtered liquor with the water so that the alcohol content becomes 40 %(v/v). |
