<P>PROBLEM TO BE SOLVED: To provide bamboo shoot as a food material and a food item. <P>SOLUTION: This bamboo shoot food material is obtained by bringing boiled bamboo shoot to an emulsified condition, followed by moderately removing water therefrom. Alternatively, the food material which has viscosity is obtained by adding water to boiled bamboo shoot to bring to an emulsified condition followed by removing water therefrom, or the food material is obtained by adding water to boiled bamboo shoot, to bring to an emulsified condition followed by removing water therefrom to bring to a powdery condition. Alternatively, the food material is obtained by dehydrating boiled bamboo shoot once followed by further removing harsh taste therefrom and bringing to an emulsified condition.
