<P>PROBLEM TO BE SOLVED: To provide a method for producing cereal added Japanese wheat noodles, enriched in nutritive value through using cereal powder, such as sprouted brown rice power without spoiling original palate feeling of Japanese wheat noodles, and to provide the cereal added Japanese wheat noodles produced by the method. <P>SOLUTION: This method for producing the cereal added Japanese wheat noodles comprises adding salt water to mixed powder which contains wheat flour, and cereal powder containing at least sprouted brown rice power, and kneading the product to make Japanese wheat noodles. The mixed powder contains 15-25 mass% of the cereal powder, and the wheat flour comprises 55-65 mass% of medium wheat flour and 45-35 mass% of hard wheat flour. <P>COPYRIGHT: (C)2009,JPO&INPIT |
