Compsn. exerting combined cleaning and disinfecting effect, esp. suitable for use in the food and drink industry, contains 0.1-75 wt.% (pref. 0.5-3 wt.%) of protease, which decomposes proteinaceous contaminations, thus facilitating the antimicrobial action of the quaternary ammonium cpds. (pref. alkyldimethylbenzylammonium salts, opt. chlorinated at the ring). The latter are used in such amts. that their concn. in aq. solns. is 10-1000 ppm (pref. 100-500 ppm).
