Prodn. of protein material for use in making fodder with a balanced protein/carbohydrate ratio, consists of growing a carbohydrate-contg base fodder in a liq. and making a fodder substrate with a base fodder fraction 'K' (dry solids) and several parts water, inoculating this substrate with yeast or other micro-organism and growing the organism to give an edible substrate. Method gives high quality fodder, and provides a chep process for making the protein. The prod. has lower moisture content than e.g. silage, and thus can be kept for longer periods.
