1484167 Frozen milk shakes KRAFTCO INC 13 Nov 1975 [20 Nov 1974] 50211/74 Heading A2B A frozen product which when melted produces a milk shake is made by preparing a mix of fat, disaccharide sugar, monosaccharide sugar, a stabilizer, an emulsifier and a polyhydric alcohol freezing point depressant, pasturizing the mix, homogenizing it and cooling to less than -7‹C, whilst injecting a gas into the mix to whip it, so as to provide a product having from 50-100% overrun and finally freezing the whipped cooled mix. The freezing point depressant is suitably either glycerol or propylene glycol and the emulsifier propylene glycol monostearate or glycerol monostearate. The stabilizer may be one or more of sodium carboxymethylcellulose, carrageenan, sodium alginate, propylene glycol alginate, locust bean gum and guar gum. |
