<p>Block of soft cheese, which melts in the mouth, consists of an external cylindrical mass with a hollow centre filled with a cylindrical internal mass; the cross-section is the same at every point. The external mass can act as a mould and be filled with a cylinder of melted cheese; this may also be hollow and receive in turn the solid mass. The various masses are in contact with each other along their peripheral surfaces and are melted together at the moment of mfr. When cut into slices the sections have the appearance of three concentric rings. Because of the solidarity of the different masses, the blocks of cheese can be cut into distinct and very thin slices; these are stable right up to the time of consumption. It is thus possible to package a number of masses of soft cheese and sell them in this condition.</p> |
