<p>Prodn. of betalaine (95% betanine, 5% betaxanthine)-based colourants (I) from beet juice comprises removing the sugars from the juice by bacterial (sic) fermentation. The fermented juice is then conc. to colour strength 400% of that of the starting material and finally crystallised. ProdL is obtd. in high yield in a stable, highly conc. form.</p> |
